For the apple pie, Claire starts with fresh Pink Lady apples, looking for the right balance of sweetness, acidity, and that familiar gooey fruit-pie texture. Then she turns to sour cherries for a homemade cherry filling that's bright, tart, and deeply cherry-forward.
